Monday Night Meal: Spaghetti Squash with Red Sauce and Turkey Meatballs

Along with movies Paul McGuire Grimes is passionate about cooking. He stopped by to make a healthier version to spaghetti squash for Monday Night Meal.

The Sauce

Olive Oil
1 – small white onion, diced
3 or 4 – garlic cloves, diced
3 Tablespoons – tomato paste, or sun-dried tomato paste for extra flavor
2/3 cup – red wine
28 oz can – crushed tomatoes
Red pepper flakes
Oregano or Italian seasoning
1 package – frozen turkey meatballs

The Squash

1 – Spaghetti Squash
Olive oil
Salt and pepper

Garnish
Basil
Fresh Parmesan cheese

The Steps

1.    Preheat oven to 400 degrees
2.    Cut spaghetti squash in half lengthwise and scrape out the seeds.
3.    Drizzle with olive oil and brush to coat the entire inside
4.    Sprinkle with salt and pepper
5.    Flip over so the flat side is down on a parchment paper lined baking sheet.
6.    Roast for 40 – 50 minutes. It really depends on how big your squash is

While the Spaghetti squash is cooking, start your red sauce with turkey meatballs

1.    Drizzle olive oil in a pan. Once heated, add in diced white onion
2.    Once onion is starting to become clear and soft, add in garlic. Don’t add too soon as you don’t want your garlic to burn
3.    Get that working for a minute then add your tomato paste. Eyeball as you see fit
4.    Add in the red pepper flakes and oregano/Italian seasoning and give it a good stir
5.    Add wine and bring to a bubble
6.    Add your crushed tomatoes and season with more salt, pepper, red pepper flakes, Italian seasoning as you see fit. Customize this to your taste buds
7.    Add turkey meatballs and simmer until spaghetti squash is done.
8.    Once spaghetti squash is cooked, use a hot pad to hold the squash and fork out the inside into a big serving bowl.
9.    Spoon sauce and meatballs over squash
10.    garnish with fresh basil and freshly grated parmesan cheese


FIERY CHERRY MULE

Ingredients

3 – Tillen Farms (brand) Fire and Spiced Maraschino Cherries (regular marschino cherries will worktoo)
2 jiggers – Svedka (brand) Cherry Vodka
12 oz – Gosling’s (brand) Diet Ginger Beer
2 or 3 spoonfuls of juice from jar of maraschino cherries

The Steps

1.    Muddle 3 Tillen Farms (brand) Fire and Spiced Maraschino Cherries and vodka at the bottom of a copper mug
2.    Add a fat handful of ice
3.    Pour in ginger beer and give it a good stir
4.    Spoon over 2 or 3 spoonfuls of juice form jar of cherries, garnish with more cherries if needed

Notes
1.    Regular maraschino cherries work just fine. I prefer the fire and spiced as it gives it that cinnamon flavor and cuts down on the sweetness
2.    I prefer Svedka brand cherry vodka as it’s less syrupy sweet than some of the other cherry vodkas on the market. Add more or less depending on your tolerance.
