Easy 7-Minute Stir Fries

Stir fry is a staple dinner that’s super easy to make and delicious. The key to making stir fry easy is to cook it once and eat twice. Creator of the blog Exercise 180, Annalicia Lynn stopped by to share how to make it with a healthy twist.

Wild Rice, Broccoli & Cashew Stir Fry
Ingredients:
Grapeseed oil
Garlic, minced
Broccoli, cut in bit-sized pieces
Wild rice, cooked
Toasted sesame oil
Shoyu sauce
Raw cashews

Directions:
Combine grapeseed oil and garlic in a frying pan and cook on low for a few minutes so the oil has the chance to pick up the flavor of the garlic. Turn up the heat to medium or medium-high and add the broccoli. Cook for 2-3 minutes. Add the wild rice, toasted sesame oil and shoyu sauce. Mix well and cook for a few more minutes until everything is hot. Top with raw cashews and enjoy!
*There are no rules in regards to proportions. For example, you might decide you like more veggies than grains or more grains than veggies…taste test and play along the way!

Wild Rice, Egg & Veggie Stir Fry
Ingredients:
Grapeseed oil
Garlic, minced
Onion, diced
Purple cabbage, chopped
Kale, chopped
Wild rice, cooked
Eggs, scrambled
Toasted sesame oil
Shoyu sauce
Peapods, cut into bite-sized pieces

Directions:
Combine grapeseed oil, garlic and onion in a frying pan and cook on low for a few minutes so the oil has the chance to pick up the flavor of the garlic and the onion. Turn up the heat to medium or medium-high and add the cabbage and kale. Cook for 3-4 minutes. Add the wild rice, eggs, toasted sesame oil and shoyu sauce. Mix well and cook for a few more minutes until everything is hot. Mix in the peapods at the end.
