Monday Night Meal: Spring Roll Bowls

If you crave a delicious meal that's easy to make and will fill you up without making you like you have a food coma, then this Monday Night Meal recipe is going to be a game changer for you. Recipe developer, Mary Jane Miller stopped by to make spring roll bowls, which are a quick dinner you can make for your family or your next get together with friends.

3 cloves garlic (or 3/4 tsp. garlic powder)
2 Tbsp. rice vinegar
1/4 cup brown sugar
1/3 cup lime juice
1/3 cup vegetable oil
2 Tbsp. chopped fresh cilantro
2 Tbsp. chopped fresh basil
2 tsp. chopped fresh mint
1 Fresno or Serrano Chile, finely chopped

Whisk all ingredients together in a small bowl.
Tip:  to make this even easier, replace the fresh herbs, garlic, and chile with about 1/4 cup Freak Flag Foods Zesty Green Herb Sauce.

Makes 4 servings
Ingredients for Bowls:
4 oz. dry rice vermicelli noodles (maifun)
2 cups mixed greens
Sliced veggies (cucumbers, avocado, carrots, bell peppers, asparagus, etc.)
Chicken, shrimp, or sliced steak
Crushed peanuts

In a large bowl place noodles and cover with boiling water
Let stand 8 minutes or until softened
Drain and rinse with cold water.
In individual serving bowls, arrange lettuce leaves in the bottom
Top with 1/4 of the noodles
Add other desired ingredients (this is a good place to use of leftovers)
Spoon dressing over all and top with crushed peanuts.
