Three Ways To Make French Toast

Owner of Golden Fig Fine Foods, Laurie Crowell stopped with fabulous French Toast recipes that are both sweet and savory.


Tropical French Toast
Ingredients
3 eggs
1/2 C milk or half and half
1/2 tsp. Vanilla Bean Paste
1 tsp coconut oil
8 pieces brioche bread

*Tropical Topping
2 bananas, diced
1/4 tsp vanilla bean paste
1/4 C maple syrup
1 TB flaked coconut
 
Directions:
1.    Whisk together eggs, milk and vanilla bean paste.
2.    Heat cast iron or nonstick pan over medium heat and melt coconut oil in pan.
3.    Dip bread in liquid flipping and coating both sides, being sure to swipe bread along the bottom to pick up vanilla bean flecks.
4.    Place in hot pan and flip when first side is browned.
5.    Place French toast on plate and top with a spoon of the Tropical Topping
 
*Tropical Topping
In small saucepan, heat bananas until lightly browned. Add vanilla bean paste and maple syrup and cook until heated through. Spoon on top of French toast and sprinkle with a little coconut.
 
Savory French Toast
Ingredients
3 eggs
1/2 C freshly grated parmesan cheese
1/2 C milk or half and half
8 pieces crusty bread
Salt and pepper to taste
1 tsp olive oil
1 tsp garlic-minced
6 fresh basil leaves-finely chopped
1 C cherry tomatoes- halved
1 TB Basil Balsamic Vinegar
 
Directions:
1.    Whisk together eggs, parmesan, milk, salt and pepper
2.    Heat a cast iron or nonstick pan to medium heat
3.    Dip bread into liquid, coating both sides and cook until nicely browned on both sides
4.    When toast is complete, place in a warm oven
5.    In skillet toast was cooked in, raise heat to medium high and add olive oil
6.    Drop in garlic, fresh basil, cherry tomatoes and balsamic vinegar and cook until tomatoes are heated through
7.    Spoon onto French Toast and shave a little fresh parmesan on top

French Toasty Rolls
8 slices bread-crusts removed
3 oz softened cream cheese
1/3 C preserves (your favorite)
2 large eggs
1/2 tsp vanilla bean paste
1/3 C milk or half and half
citrus zest (that matches your preserve choice...orange, lemon or lime are all good choices)
2 TB butter
 
Directions:
1.    Flatten bread with rolling pin
2.    spread a little layer of cream cheese on each piece, top with a spoon of jam spread around. Don't go too close to the edge though, or it will squeeze out when rolled!
3.    roll up and set aside
4.    In a small dish, whisk together eggs, milk, vanilla bean paste and zest of your choosing.
5.    Dip rolls into liquid, turning to completely coat
6.    In nonstick pan, melt butter over medium heat
7.    Cook rolls, turning a few times, until nicely browned all over
8.    Serve with a dusting of powdered sugar or cocoa powder
