Blueberry Maple Syrup

Blueberry Maple Syrup

1 cup maple syrup
2 cups fresh or frozen blueberries
1 Tbsp. lemon juice
1 (2 to 3 inch) cinnamon stick
1 Tbsp. butter

In a small saucepan combine syrup, 1 cup of the blueberries, lemon juice and cinnamon stick.  Bring to a boil, reduce heat and simmer 2 minutes or until the berries soften.  Mash berries with the back of a spoon.  Simmer another 2 minutes or until syrup foams.  Remove from heat.  Remove and discard cinnamon stick.  Stir in butter and remaining cup of berries.  Serve warm on pancakes, waffles, or French toast.  Store refrigerated.
