Spatchcocking a Turkey

Cooking for Dad's Rob Barrett stopped by the TCL kitchen to chat about spatchcocking a turkey for the Thanksgiving holiday.

Steps:

1. Remove gizzards from turkey cavities

2. Cut turkey back bone out

3. Split wishbone 

4. Spread turkey flat

5. Cover with olive oil, salt and pepper

To Grill:

Place on hot part of the grill for 5 minutes a side. Slide over to indirect heat or lower flame until internal temp reaches 155. Remove from grill and let it rest for 5 minutes.

To Bake: 

Bake in oven at 450 degrees for about 1 hour and 10 minutes (bast twice throughout)
