Angel Food Cake Day at Angel Food Bakery

When it’s National Angel Food Cake Day there’s only one way to celebrate. Eat! In honor of the fun holiday, Angel Food Bakery is stepping up their version of the beloved cake. Cloud 9 Angel Food Cake is just what is sounds like. It is delicious and oh so fun to make. It even includes a s’mores feel when it’s all decorated. Here’s the recipe if you’d like to try it yourself.

Cloud 9 Angel Food Cake

Ingredients:

4 oz cake flour, sifted
6 oz sugar
12 eggs whites
1 tsp cream of tartar
pinch salt
2 tsp vanilla
6 oz sugar
1 lemon, zested
2 tsp lemon juice

Directions:

Oven @ 350 convection

Sift flour with 1st 6oz of sugar. Whip egg whites, cream of tartar, salt & vanilla until foamy. Slowly add 2nd 6oz of sugar to eggs while whisking. Whip eggs until just under soft peak stage (eggs will hold a ribbon of batter, but not peaks). DO NOT over whip.

Fold sifted flour (in 3 parts) into egg whites. Fold in zest and juice after flour is mixed in.

Gently pour batter into unsprayed and unlined angel food cake pan and bake until top is golden brown and springs back (minimum 25 minutes). Immediately invert cake pan onto it’s “feet” (or onto long necked bottle if your pan doesn’t have “feet”) and let cool upside down at least 1 hour.
