Homemade Applesauce
Coalition Restaurant owner Eli Wollenzien stopped by the TCL kitchen with some tasty homemade applesauce recipes.
Try it at home with these recipes!
Classic Chunky Cinnamon
-4 honeycrisp (or other sweet apple) (not peeled, cut into medium chunks)
-3/4th cup apple cider
-2 tbsp brown sugar
-1 tsp cinnamon
-pinch of salt
1. Place all ingredients in a sauce pot.
2. Bring cider to a boil, reduce to a simmer.
3. Simmer for 15-20 minutes, or until apples are very soft and liquid is almost gone.
4. Remove from heat, mash with a fork, and chill.
Ginger-Honey
-4 granny smith apples (or other tart apple) (peeled, cut into medium chunks)
-3/4th cup Reeds Ginger Beer
-2 tbsp good honey
-pinch of salt
1. Place all ingredients in a sauce pot.
2. Bring ginger beer to a boil, reduce to a simmer.
3. Simmer for 15-20 minutes, or until apples are very soft and liquid is almost gone.
4. Remove from heat, mash with a fork, and chill.
Pear-Brown Butter
-2 Gala apples (or other mildly sweet apple), (peeled, cut into medium chunks)
-2 green pears (peeled, cut into medium chunks)
-3/4 cup apple cider
-1 sprig rosemary
- 2 tbsp brown sugar
-2 tbsp brown butter
-pinch of salt
1. Place all ingredients in a sauce pot, except for the brown butter.
2. Bring cider to a boil, reduce to a simmer.
3. Simmer for 15-20 minutes, or until apples are very soft and liquid is almost gone.
4. Remove rosemary sprig.
5. Stir in brown butter.
4. Remove from heat, mash with a fork, and chill.
