Pumpkin Treats

Baking Instructor Nancy Berguson stopped by the TCL kitchen with three tasty pumpkin treat recipes. 

SUPER SIMPLE PUMPKIN BREAD

1 package yellow cake mix

1 can (15 ounce) solid-pack pumpkin (or prepare your own from fresh pumpkin)

4 Large eggs

1/3 cup molasses

1 tsp ground cinnamon

1 tsp ground nutmeg

1/3 cup chopped nuts toasted (optional) use your favorite nut

1/3 cup raisins (optional) I use white raisins-also known as Golden)

Preheat oven to 350 degrees.  Combine all ingredients in large bowl and beat with electric mixer on medium for 2 minutes only.  Pour into prepared pan and bake for 60 minutes or until tested done.

 

PUMPKIN CHOCOLATE CHIP MUFFINS

2-1/2     cups all-purpose flour

1              tbsp baking powder

1-1/2     tsp pumpkin pie spice

½             tsp salt

1              cup solid-pack pumpkin (or prepare you own from fresh pumpkin)

1              cup packed brown sugar

¾             cup milk

6              tbsp butter, melted

2              large eggs

1              cup mini semisweet chocolate chips

½             cup chopped nuts toasted (optional)

 

Preheat oven to 400 degrees. Line 18 standard muffin cups with paper cups or spray with nonstick cooking spray.

Combine flour, baking powder, pie spice and salt in large bowl using a whisk to fluff.  Beat pumpkin, brown sugar, milk, butter and eggs in medium size bowl with spoon until well blended.

Add pumpkin mixture and chocolate chips as well as nuts if desired to flour mixture; stir just until moistened-do not over beat!

Spoon or scoop into prepared muffin cups

Bake 15 minutes or until toothpick inserted into centers comes out clean.

Pumpking Bars with Orange Buttercream Frosting 

2 cups all-purpose flour

2 tsp pumpkin pie spice

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 cup softened butter

1 cup granulated sugar

1 cup solid pack pumpkin (or prepare your own from fresh pumpkin)

1 egg

1 tsp vanilla

1 cup toasted, chopped nuts pecans or walnuts (optional)

Steps: 

Preheat oven to 350 degrees. Spray a 13 x 9-inch baking pan with nonstick baking spray.

Combine dry ingredients in a medium bowl and whisk together.

Beat 1 cup of butter and granulated sugar in large bowl of electric mixer at medium speed until light and fluffy. 

Add pumpkin, egg and the 1 tsp of vanilla beating until well blended.  Stir in nuts if desired.

Spread into prepared pan.

Bake about 25 minutes or until toothpick inserted in center comes out clean; cool completely.

FROSTING FOR BARS

¾             cup softened butter

3              cups powdered sugar

1              tsp vanilla

1              tsp grated orange peel

2-3          tbsp orange juice

Beat butter until light and fluffy.  Add powdered sugar and beat until well blended.  Add vanilla, orange peel and orange juice beating until fluffy.  Add food coloring if desired.
