Cook with Homegrown Herbs

Rob Barrett of "Cooking For Dads" owner stopped by to share some tasty recipes you can make with herbs you grow at your house. 

 

Rob’s Basil Pesto

Ingredients:

1 cup fresh basil leaves
1/4 cup pine nuts, almonds or walnuts or pecans.
1/4 cup olive oil
1/4 cup parmesan cheese
3 cloves of garlic
pinch of salt

Directions:

Place all ingredients in a vita mix, food processor mortar and pestle.

Pulse, mix or mash until forms a homogeneous paste.

store in airtight container or freeze in ice cube trays.

 

Rob’s Pesto Pasta

Ingredients:

1 box cooked pasta
1/2 C fresh pesto
1 C chicken
1/2 cup cheery tomatoes cut in half
Salt and pepper to taste

Directions:

Place all ingredients in a bowl and stir to coat. Serve warm or cold.

 

Rob’s Greek Chicken

Ingredients:

2 chicken breasts, hammered and sliced in thirds
3 spoonfuls fresh lemon juice
handful fresh oregano
handful fresh thyme
olive oil
Salt and pepper to taste
Tzatkiki sauce

Directions:

Wash the herbs and remove from stems.

Place all ingredients in a bowl and add just enough olive oil to coat. Stir.

Place in refrigerator for an hour minimum to overnight if possible.

Grill or fry your chicken until done.

Serve with pita or naan bread and a side of tzatziki sauce.

 

Rob’s Sage and Chive Eggs

Ingredients:

3 eggs scrambled
2 spoonfuls fresh chives chopped
1 spoonful chopped sage
1” of butter
salt and pepper to taste

Directions:

In a medium frying pan over low heat melt butter. 

Add eggs and herbs and stir occasionally until they come together. Keep heat on low.

Remove from pan before completely dry. They will continue to cook after removal.
