Egg-in-a-Hole Breakfast Ideas

If you like eggs and toast you are going to make this recipe for breakfast. Laurie Crowell from Golden Fig stopped by to share how to make different variations of Eggs-in-a-Hole toast ideas.

Laurie recommends buying Brioche bread from Bakers Field Flour in Minneapolis. If you can't find that try to find an unsliced loaf so you can slice it thicker. In a pinch, Texas Toast will do.

Chevre Asparagus Egg Toast

1 loaf bread, unsliced
4 oz chevre (plain, herbed or peppered is good)
4 large or xl eggs
1 lb fresh asparagus-sautéed 
Butter
Salt and pepper to taste

Directions:
Preheat griddle or pan to medium heat.
Slice bread into thick pieces and cut circle out of middle of slice. Butter bread and round and place on griddle. While buttered side is grilling, butter the other side.
When toasted, flip over and crack egg into circle. Sprinkle with salt and pepper. When about half cooked,  sprinkle chevre on top so it starts to melt. Add asparagus to pan to heat it back up.
Cook until egg is desired doneness.
Serve with little grilled toast round for dipping.

Caprese Egg Toast

1 loaf bread, unsliced
1 C fresh mozzarella, drained and chopped
1 ripe tomato, sliced
4 fresh basil leaves, thinly sliced
4 large or xl eggs
Butter
Salt and pepper to taste

Directions:
Preheat griddle or pan to medium heat.
Slice bread into thick pieces and cut circle out of middle of slice. Butter bread and round and place on griddle. While buttered side is grilling, butter the other side.
When toasted, flip over and crack egg into circle. Sprinkle with salt and pepper. When about half cooked,  sprinkle mozzarella on top so it starts to melt. Add tomato to pan to cook, when cooked place tomato on top of toast
Cook until egg is desired doneness.
Sprinkle with fresh basil and serve with little grilled toast round.

Cheddar and Green Onion Egg Toast

1 loaf bread, unsliced
1/2 C shredded aged cheddar
4 fresh green onions, chopped
4 large or xl eggs
Butter
Salt and pepper to taste

Directions:
Preheat griddle or pan to medium heat.
Sauté green onions in 1 TB butter and set aside.
Slice bread into thick pieces and cut circle out of middle of slice. Butter bread and round and place on griddle. While buttered side is grilling, butter the other side.
When toasted, flip over and crack egg into circle. Sprinkle with salt and pepper. When about half cooked,  sprinkle cheddar on top so it starts to melt.
Sprinkle cooked green onions over top.
Cook until egg is desired doneness.
Serve with little grilled toast round.
