Taco Soup

Ingredients:
2 pounds ground beef or ground turkey
1 medium yellow onion
1 green pepper, finely diced (optional)
1 packet (1.25 ounces) taco seasoning
1 packet (1 ounce) dry ranch dressing mix
1 can (28 ounces) diced or crushed tomatoes
1 jar (16 ounces) salsa
1 can (4 ounces) diced green chiles
2 cups chicken stock
1 can (15 ounces) ranch style beans
2 cups frozen or 1 can (15 ounces) whole kernel corn, drained

Directions:
In a large soup pan brown the beef (or turkey) with the onion and pepper until beef is crumbly and no longer pink. Drain any grease. Add next 7 ingredients. Simmer for 15-25 minutes. If soup needs more broth add a little water or chicken stock. Serve with your favorite taco fixings and tortilla chips for dunking.

Purple and Gold Trifle Dessert

Ingredients:
2 packages (3.4 ounces) pistachio instant pudding mix
2 packages (3.4 ounces) French vanilla instant pudding mix
8 cups milk
1 prepared angel food cake (10-in. tube pan size) or a large pound cake, cut into 1-in. squares
1 carton (8 ounces) frozen whipped topping, thawed
Purple and gold jimmies Football rings, optional

Directions:
In a bowl use a mixer or whisk to beat the pistachio pudding mixes with 4 cups milk until it starts to get a little thick. In another bowl, combine the vanilla pudding mixes and remaining 4 cups of milk. Beat until it starts to get thick.  Refrigerate or let both puddings sit a few minutes until they thicken a bit. In a trifle bowl or a clear glass bowl, layer half the cake cubes. Next spoon the vanilla pudding over the cake cubes. Then place the remaining cake cubes on top, followed by the pistachio pudding.

Cover and refrigerate until ready to serve. You can make this up to a day ahead. Right before serving spoon or use a piping bag to make a “big cloud” of whipped topping over the the green layer. Sprinkle jimmies on top.  Arrange rings on the whipped topping.

Note: I live in Green Bay, Wisconsin home of the Green Bay Packer. We love the Green and Gold. You can make this dessert for your favorite team too. You can use all vanilla or white chocolate pudding and color it your team colors. I think the food coloring gels work best. Then, decorate the top with jimmies or sprinkles in your colors too! Why not make mini trifles? That way everyone gets their own. This dessert looks really cute layered in small canning jars, juice glasses, wine glasses or even clear plastic cups. Have fun with it! GO TEAM!
