Warm Spinach Salad

Dude week continues with a manly spinach salad recipe Popeye the Sailor Man would approve of. The owner of Coalition in Excelsior and Edina, chef Eli Wollenzein explained how to make it.

Ingredients

1 Tsp Olive Oil
2 oz Fingerling Potatoes (roasted, cooled, sliced in half)
Kosher Salt & Black Pepper, as needed
2 oz Mustard Dressing
2 oz Spinach
1 oz Bacon (crispy, chopped)
1 oz Red Onions (sliced)
1 ½ oz Cherry Tomato (quartered)
1 oz Parmesan (shaved)

How to make it:

  1. Heat olive oil in sauté pan.  Add potatoes and green beans and season with salt and pepper.
  2. Cook vegetables over medium heat until potatoes are hot and green beans begin to wilt. Add mustard dressing and toss until vegetables are lightly coated and hot.
  3. In a large bowl, toss hot vegetables, spinach, and bacon.
  4. Mound on a plate. Top with red onions, cherry tomatoes, and parmesan cheese.


Mustard Vinaigrette

Ingredients

½ cup Whole Grain Mustard
½ cup Dijon Mustard
1 cup Olive Oil
1 Tsp Kosher Salt 
2 Tbsp Sugar

How to make it:

  1. Mix together all ingredients until well blended.
