In the Spotlight: Nordic Ware Bundt Pan

Minnesota is getting some national attention for something the great people of this state developed nearly 70-years-ago. You know it well, the Bundt pan. Taylor Hick's new show, “State Plate”, heads to Minneapolis to find out what makes the Bundt pan and that delicious cake so great. The episode airs September 22nd on Inspiration Network, but Christine Cook from Nordic Ware stopped by to show us how to make our own classic chocolate Bundt cake.

Chocolate Bundt Cake Recipe

3/ 4 cup butter, softened
3/ 4 cup sugar
3/ 4 cup brown sugar
2 teaspoons vanilla
2 eggs, room temperature
1 2/ 3 cups flour
3/ 4 cup cocoa
1 teaspoon baking soda
3/ 4 teaspoon salt
3/ 4 cup buttermilk
1/ 3 cup sour cream
6 oz bittersweet chocolate, coarsely chopped
1 1/ 4 cups semisweet chocolate chips
7 tablespoons heavy cream

Preheat oven to 325 degrees F (162 degrees C). Grease and flour pan; set aside. In large bowl, combine butter, sugar and brown sugar; beat on medium speed until light and fluffy. Stir in vanilla. Add eggs, one at a time, beating well after each addition. In medium bowl, sift together flour, cocoa, baking soda and salt. On low speed, add flour mixture to butter mixture in three additions, alternating with buttermilk and beginning and ending with flour. Add sour cream. Beat on medium speed 1 minute, scraping bowl often. Fold in chopped chocolate. Spoon batter into prepared pan.

Bake for 40-45 minutes, until toothpick inserted comes out clean. Cool in pan 15 minutes.  Invert cake onto cooling rack to cool completely.

 

Salted Caramel Glaze

3 tbsp unsalted butter, cut into 6 pieces
½ cup packed dark brown sugar
½ cup heavy cream
1 tbsp light corn syrup
¼ tsp fine sea salt

In a saucepan over medium-high heat, combine butter, sugar, cream and corn syrup. Stir until the mixture is smooth and bring to a boil. Continue to boil, stirring occasionally, until slightly thickened, about 3 minutes more. Remove from heat, stir in the salt and set aside to cool slightly. Pour warm sauce over cake.
