Taste the Trend: Retro Spaghetti-O Jello

We tasked cookbook author and recipe developer Mary Jane Miller with updating a viral recipe for Spaghetti-O Jello for another edition of "Taste the Trend". 

Gazpacho Pasta Salad
8 oz. ring pasta
2 large tomato, chopped (2 cups)
1 small cumber, chopped (1 cup)
2 small bell peppers, any color, chopped (1 cup)
1 small red onion, chopped (1/2 cup)
1 jalapeño chile, seeded and chopped
1/4 cup fresh chopped cilantro
Tomato Vinaigrette
1/4 cup tomato juice
3 Tbsp. olive oil
2 Tbsp. red wine vinegar
1/4 tsp. salt
1 clove garlic, finely chopped
1. Cook pasta as package directs.  Rinse with cold water, drain.
2. In a large bowl, toss together pasta and salad ingredients.
3. In a small bowl, whisk together vinaigrette ingredients.  Pour over salad and toss to mix.
Makes 8 servings
