12 Days of Grilling: Breakfast, Lunch, & Dinner

The Minnesota Beef Council has tons of recipe ideas so you should never be at a loss for what to make for breakfast, lunch, or dinner.  Registered Dietitian, Jena Pape, from HyVee, gives us her ideas for all three meals.

Sirloin Steak Skewer Making Station

All you need:

  • 1 lb top sirloin, cut into 1-1 ½ inch cubes
  • Veggies or fruit of your choice (we used bell peppers, onion, mushroom, pineapple, zucchini)

Versatile Marinade/Brush-On for Meats and Veggies

All you need:

  • 1/2 cup Hy-Vee Select extra-virgin olive oil
  • 1/2 cup Hy-Vee orange juice
  • 1/4 cup fresh lime juice
  • 2 tbsp Hy-Vee honey
  • 2 tbsp minced chives
  • 1 tbsp minced garlic
  • 2 tsp orange zest
  • 2 to 3 tsp snipped fresh herbs such as chives, thyme, basil, oregano or rosemary
  • Garnish with slices of oranges and limes

All you do:

  1. Place beef pieces in a large resealable plastic bag placed in a shallow dish; set aside. Place veggies in another large resealable plastic bag placed in a shallow dish; set aside. 
  2. For marinade, in a medium bowl whisk together all marinade ingredients. Divide marinade between beef and vegetables in bags. Seal bags and marinate in the refrigerator for 1 hour, turning bags occasionally.
  3. Grill for 15 to 18 minutes or until steak reaches desired doneness and vegetables are tender and slightly charred.
  4. *Note: If using bamboo or wooden skewers, soak skewers in water for 30 minutes prior to grilling to prevent burning.

Grilled Ground Beef Sliders

All you need:

  • 1 1/4 pounds lean ground beef
  • 1 tbsp Hy-Vee Worcestershire sauce
  • 2 cloves garlic, minced
  • 1/4 tsp garlic pepper
  • 2 tsp chopped parsley

All you do:

  1. Coat grill rack with nonstick cooking spray. Preheat grill to medium, 300 to 350 degrees.
  2. Gently combine beef, Worcestershire, garlic, garlic pepper and parsley in large bowl. Divide beef mixture and form 8 small, 1/2-inch-thick patties.
  3. Grill patties 5 to 6 minutes per side or until internal temperature reaches 160 degrees.

Breakfast Kabobs

All you need:

  • Fruit of your choice (we used strawberries and bananas)
  • Mini Pancakes, prepared
  • Beef Sausage, prepared
  • Maple Syrup or yogurt

All you do:

  1. Assemble from bottom to top alternating beef sausage, pancake, strawberry, & banana on a skewer. Repeat until skewer is full. Feel free to use any fruit combinations to your liking.
  2. Set aside maple syrup or yogurt for dipping.
