Jerk Steak & Sweet Potato Foil Packet

Steve headed to Winter Park in Eden Prairie to make jerk steak and sweet potatoes with Geji McKinney-Banks. Get the grocery-store brand of seasoning she loves!

Geji’s Doneness Scale for Cooking Beef

Chef tip: a cooking thermometer is all you need to find out how your meat is cooked. No need to cut a steak open to check for pink!

  • 120 degrees = rare
  • 130 degrees = medium rare
  • 140 degrees = medium
  • 150 = medium well
  • 160 = well done

 

Jerk Steak & Sweet Potato Foil Packet

6 oz Beef Sirloin
1 ea Sweet Potato, medium dice
Red Pepper, sliced
Yellow Onion, sliced
1 tsp Lime Juice
Olive Oil, as needed
Jerk Seasoning, as needed
Seasoned Salt, as needed
Kosher Salt, as needed
Black Pepper, as needed
1 tsp Fresh Thyme, chopped
½ tsp Garlic, chopped
Aluminum foil

Partially cook sweet potatoes in boiling water just until slightly soft (you will finish cooking in foil with the beef). Drain water from potatoes. Allow to dry.

In a medium bowl, add your diced potato. Add about a tablespoon of olive oil. Mix well. Set aside.

For the Beef: in a small mixing bowl add about 2 Tbsp of Jerk seasoning and lime juice together to form a paste. Add more jerk if needed.

Rub beef in olive oil. Lightly season both sides of meat with seasoned salt. Spread the paste evenly on both sides of the beef.

Make sure to spray grill so that the beef won’t stick. When grill is hot, mark the beef on both sides just to get grill marks and a little of the grill flavor. Remove from grill and rest.

Place your beef in the middle of your aluminum foil sheet (your sheet should be enough to cover and fold your meal).

Add your sweet potatoes and then top with your onions and peppers.

Seal your foil tightly.  Place your foil packet on the grill (place in the area of just medium heat so not to cook too fast) or place your foil packet on a sheet pan and put in the oven on 400 degree pre heated temperature for about 10 minutes for a medium cooked steak (depending on your oven – cook times vary).  Once potatoes are fork tender and beef is done, remove from oven.  Add kosher salt and pepper to potatoes to taste.
