Strawberry Salsa

Now is the time to start making recipes with strawberries since their they are in season. Here are some fantastic recipes you must make this summer. Owner of the Golden Fig, Laurie Crowell shows us how.

 

Strawberry Salsa

2 C fresh strawberries, chopped
1/2 C red onion, chopped
1 jalapeno pepper, finely minced
1/3 C fresh cilantro, chopped
juice and zest of 1 lime
salt and pepper to taste.

Mix all ingredients and let rest for at least 1 hour before serving.

Delicious on corn chips, grilled chicken, grilled salmon etc.

 

Strawberry Lavender Popsicles

1 quart fresh strawberries, washed and hulled
1/2 - 1 C fresh lemonade
1 drop lavender oil (be sure to use food grade)
Popsicle molds or dixie cups and popsicle sticks

Buzz all ingredients up in blender and pour into molds.

Freeze and enjoy

 

Grilled Asparagus and Strawberry Salad

1 lb fresh asparagus, washed and trimmed
1 quart fresh strawberries, washed and hulled
1/4 C Basil Balsamic Vinegar
1/2 C Olive Oil
Salt and Pepper, to taste
fresh basil, chiffonade
Chevre, crumbled (blue cheese is also a delicious substitute

In small jar, shake Basil Balsamic, Olive Oil, Salt and Pepper until emulsified to make vinaigrette.

Toss strawberries and asparagus in half of the vinaigrette.

Place strawberries and asparagus directly on grill. Turning frequently

Remove from grill when tender.

Place on plate, crumble chevre over top and dress with remaining vinaigrette.

 

Fresh and local strawberries will be available at many markets throughout the next few weeks. I am most familiar with the St. Paul Farmers Markets of course, because I am a vendor at those markets. But there are nice, local markets all over our fine cities worth seeking out these seasonal beauties.

In addition to strawberries at market, this weekend at the lowertown St. Paul Farmers Market, there is a super fun and FREE kids event in honor of Fathers Day. Kids can stop by the market booth and bottle up some herbs as well as custom color a label to put on the bottle for Dad to flavor all the goodies picked up from market. This event is both Saturday and Sunday from 9am-noon.

 

Lorences Berry Farm. 

They are a great little, 5th generation family farm just 45 minutes south of the cities, in Northfield, MN.
In addition to being at the St. Paul Farmers Market (various locations), they also are open every day for picking 6am- 12 and Tuesday Wednesday and Thursday evenings from 6pm till 8:30. Call before coming to the farm for picking updates.
