Salad Dressing Ideas Without the Salad

Baseball games, barbecues, cabin trips… Many of us get swept up in the fun of summer activities so when it comes to cooking dinner for your family this summer, something quick and easy is always your best bet!

Chances are you have tons of salad dressings in your refrigerator but hold off on the romaine because Chef and Author, Daniel Green explains how there are plenty of ways to make a meal with salad dressing without the salad.

Ranch Guacamole

Serves 4-6

Ingredients:

3 ripe avocados
1/3 cup Litehouse Homestyle Ranch Dressing
1/4 red onion finely chopped or 1 tablespoon  Litehouse Red Onion
1/4 cup chopped cilantro or 1 tablespoon Litehouse Cilantro
1 clove garlic crushed or teaspoon Litehouse Garlic
3 scallions chopped finely
1 teaspoon finely chopped jalapeno pepper
Squeeze of lemon to serve

Directions:

Peel and take the pit out of the avocado and scoop it into a bowl and mash up with a fork.

Add all the remaining ingredients and mix well. When you place on a serving dish squeeze with some lemon to stop the avocado going brown.

 

Buffalo Bleu Cheese Chicken Wraps

Serves 2

4-8 lettuce leaves
1 lb cubed chicken breast with no skin
2 tablespoon olive oil
4-6 button mushrooms finely chopped
1/2 white onion chopped finely
1 clove crushed garlic
1/3 cup hot buffalo sauce
1/4 cup of Litehouse Chunky Bleu Cheese Dressing
Handful fresh parsley chopped finely

Directions:

Heat a nonstick pan with 1 tablespoon of olive oil . Cook the chicken on a high heat, turning for about 3-4 minutes until cooked through. Take out the pan and place in a bowl mixed with the buffalo sauce and set aside. Now heat the remaining oil and sauté the onion, garlic, and mushrooms. Cook on medium heat stirring for about 3 minutes . Take off the heat and place into a bowl assemble the wraps with lettuce filled with the onion and mushroom mix and then add the chicken. Drizzle Litehouse Bleu Cheese dressing on top then some fresh chopped  parsley.
