Celebrating Cinco de Mayo With Cinco de Mayo Recipes

Chef Amalia Moreno used unique ingredients including prickly pear and cactus for great ideas you can use for your Cinco De Mayo fiesta! She also talked about the proper way of drinking tequila and what to pair with it.

 

CEVICHE DE TUNA Y GARBANZO
Fresh Prickly Pear in spicy citrus sauce with bell pepper medley and fresh garbanzo beans

Serves 1
½ cup peeled and diced prickly pear
½ tbsp. yellow bell peppers, thinly sliced
2 tbsp. freshly squeezed lime juice
Fresh habanero, minced, to taste
1 tbsp. Mint, parsley –chopped
Kosher salt and freshly ground black pepper

Garnishes
Shredded queso quesadilla
Steamed fresh garbanzo beans

Combine all first five ingredients in a bowl.  Taste and adjust seasonings.

Serve in glass cups and garnish.

ENSALADA DE NOPALES ASADOS
Charred cactus salad
Serves 2-3

1 cup charred fresh cactus strips
½ red onion, thinly sliced
4-5 charred grape tomatoes
1 tsp fresh minced charred jalapeño
½ tsp fresh minced oregano
1 tsp fresh cilantro leaves
Red wine vinegar + olive oil
Kosher salt and freshly ground black pepper

Garnishes
Avocado slices
Crumbled queso fresco
Cilantro sprigs

Combine all first eight ingredients.  Taste and adjust seasonings.

EL JIMADOR TEQUILA CON SANGRITA
Serves 2-3

4-8 oz tequila
Sangrita
1 cup fresh tomato juice
1 tbsp fresh orange juice
1-2 tbsp lime juice
1-2 tsp puréed onion
Minced rushed pickled jalapenos plus some juice to taste
Few drops of Worcestershire and Tabasco
Kosher salt and freshly squeezed black pepper to taste

Blend all ingredients until smooth. Chill or serve immediately after blending. Serve alongside tequila.
