Dip Off: Final Round

It’s the final day of the TCL staff going against each other in our Super Bowl Dip Off!  TCL’s Executive Producer, Mandy Tadych takes on the Local Guy About Town, Mike Marcotte!

Mandy’s Dip:
Taco Dip

Ingredients:

2 packages of cream cheese softened
1 container of sour cream
1 package of taco seasoning
1 jar of your favorite salsa
1 can of black beans drained
1 package of Mexican shredded cheese
Shredded lettuce
Cilantro
Sliced Black Olives

How to make it:

Mix together the cream cheese, sour cream and taco seasoning.   It can be easiest to use a hand mixer or Kitchen aid mixer to get it really smooth.  Spread onto a shallow tray or cookie sheet.  Top with drained black beans and 1 jar of salsa.   Top with cheese, shredded lettuce, olives and cilantro.  

 

Mike’s Dip:
3-2-1 Dip

Ingredients: 

3 8-ounce packages of cream cheese
2 cans of diced tomatoes, drained (look for brands like Red Gold or RO-TEL who sell petite diced tomatoes with green chilies). If you're looking for some heat, look for hot or fire roasted varieties.
1 16-ounce tube of sausage (Jimmy Dean)
Diced onion (optional)
Chips

How to make it:

In a skillet, brown the sausage. After adding a disposable liner to your slow cooker, add cream cheese, tomatoes, sausage (and onion if desired). Keep on low for two hours, stirring as needed. Alternative: after cooking sausage, put ingredients in microwave safe bowl and cook until cream cheese is melted. Serve with chips. Enjoy!
