Fix My Food: Healthy Brownie Sundae

All this week, we've taken delicious but unhealthy recipes and swapped out an ingredient or two to make them healthier for you and fittingly we're wrapping up our fix my food series with dessert with chef and owner of Wyatt Hospitality, Ray Wyatt.

Healthier Salted Caramel Ice Cream

Ingredients:

¼ cup Greek yogurt
2 Tbsp maple syrup
10 whole milk ice cubes
1 frozen banana cut into 1 inch pieces
6 pitted dates
¼ tsp sea salt

Blend the first 4 ingredients together until creamy. Add in the dates and sea salt and pulse until just combined.  Serve immediately or freeze for a firmer consistency. 

 

Tofu Brownies:

Ingredients

1/2 cup unsweetened cocoa powder
1 cup white flour 
1/2 tsp baking powder
1/2 tsp salt
1 cup granulated sugar 
1/4 cup plus 2 tbsp soft or firm tofu 
1/2 cup applesauce
6 tbsp melted coconut oil
1/4 cup milk of choice
2 tsp pure vanilla extract
3/4 cup Chopped Chocolate bar, 70% Cocoa content is best

Combine dry ingredients in a bowl and mix very well.  In a blender, combine wet ingredients and blend until smooth.  Pour wet over dry and stir, then pour into an 8-inch square pan, greased well or lined with parchment. Cook for 18-24 minutes at 340F or until just firm in the middle, remove and cool.  Put the pan of  brownies in the fridge to cool and firm up These brownies taste sweeter and richer if you don’t eat them until the next day!

This recipe for chocolate sauce may have 100 calories per serving, but it is good fat from coconut oil and contains only 4 ingredients, all of which are good for you!


Better For You Chocolate Sauce

Ingredients:

4 tablespoons (60g) virgin coconut oil
1/4 cup plus 1 tablespoon cocoa powder, sieved
1/4 cup honey (more if you like it sweeter)
1/2 tsp Vanilla extract

Melt the coconut oil in a small saucepan. Add the vanilla and honey and stir. Add the cocoa, Stir until it gets thick and serve warm. Note: The colder the sauce gets the thicker it will become.
