Stained Glass Cookie Ornaments

Day 10 in our 12 Days of Cookies series, presented by Land O’Lakes, took an unexpected turn when pastry chef Zöe François busted out a pile of watermelon Jolly Ranchers and blitzed them up in a spice grinder. Turns out, those super sweet candies melt perfectly into a colorful “stained glass” that fill Zöe’s ginger cookies. The gorgeous treats can even be hung on a tree as an edible holiday decoration!

Stained Glass Holiday Cookies

Gingerbread cookie dough:

¼ cup unsalted butter
¼ cup brown sugar, packed
¼ cup molasses
2 tablespoons water
1 ¾ cup all-purpose flour
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
Pinch salt
Hard candies, such as Jolly Ranchers

Mix cookie dough:

  1. Cream the butter, sugar, molasses and water in a stand mixer fitted with a paddle attachment. Add the flour, soda, spice and salt, mix until incorporated.
  2. Wrap dough and refrigerate for at least 2 hours.

Preheat oven to 325°F.

  1. Trace the pattern you want to make on a sheet of parchment. You can use a simple design or one more intricate, but make sure they image leaves enough room to easily fill the spaces with candy.
  2. Line your patterned parchment into a baking sheet. Use the gingerbread cookie dough to create 1/8-inch thick ropes and lay them over the pattern on the parchment.
  3. Bake the cookie dough for about 3 minutes, just to set it. Allow the cookie dough to cool completely before adding the candy.
  4. Crush candy into small pieces.
  5. Arrange the crushed candy in the spaces between the set cookie dough.
  6. Bake the cookies for about 5 minutes, until the candies have melted and are smooth. They will be very sticky when hot, but as soon as they cool they will peel right off the parchment.
  7. There is usually a bubble from the candy that will allow you to thread a ribbon in the glass. Don’t try to hang it from the cookie edge, because the cookie alone won’t be strong enough to hold it up.
