Duck Burger Sliders

TCL's Wine Guy, Haskell's Ted Farrell, is a man with many talents. Not only does he have a wealth of knowledge about wine, he knows his way around the kitchen, too. He shares his own recipe for duck burger sliders along with a couple wines that pair well with wild game.

Duck Burger Sliders


8 oz. duck breast
4 oz. salted pork
1 tsp. sage
garlic powder to taste
salt and cracked pepper to taste


In a food processor or meat grinder, mince duck breast and pork. Fold in the spices to the mixture and refrigerate for up to six hours. 

Form meat into patties about the size of a silver dollar. Place in frying pan or the grill for 2 to 3 minutes per side. Do not overcook.

Serve with Hoisin sauce and cheese. Bun optional. Enjoy!
