Chocolate Brownie Mint Sandwiches

Day 6 in our 12 Days of Cookies series is all about super rich, delicious chocolate. Elizabeth visits the home kitchen of Zöe François, the pastry chef behind the blog “Zöe Bakes” and the co-author of the “Artisan Bread in 5 Minutes a Day” book series. Zöe shows us how to make Chocolate Brownie Mint Sandwiches garnished with a candy cane crunch perfect for the holiday season.

Chocolate Brownie Mint Sandwiches

Brownie cookie:

350g dark chocolate, chopped
40g unsalted butter
2 large eggs
1 teaspoon vanilla
2/3 cup (150g) sugar
¼ cup (35g) all-purpose flour
Pinch salt
¼ teaspoon baking powder

Mint Buttercream:

125g unsalted butter
¾ cup confectioners’ sugar
Mint extract
Candy Canes, crushed for garnish

Preheat oven to 350°F

  1. Line baking sheet with non-stick baking mat
  2. Melt 200g of the chocolate with the butter in a small bowl over a double boiler, stir until smooth. Remove from heat.
  3. Beat eggs, sugar and vanilla until light and foamy, about 10 minutes.
  4. Fold the flour, salt, baking powder, melted chocolate and remaining chopped chocolate into the egg mixture.
  5. Let the mixture sit for 10 minutes.
  6. Scoop 1 tablespoon size balls onto prepared baking sheet
  7. Bake for about 8 minutes or until the tops are just starting to crack. Don’t over bake.
  8. Allow to cool completely before filling.

    To make the filling:
  1. Beat the butter and confectioners’ sugar until smooth and fluffy. Add the mint extract to taste.
  2. Spread the filling onto half the cookies and then top with remaining cookies.
  3. Dip the edges in the candy cane.
