TCL Goes Hog Wild: Pork Chops


Pork Chops are a go-to for many mom’s when it’s time to make dinner.  With pork chops, it’s pretty easy to turn them into dry chewy hockey pucks.  Executive Chef of the Dellwood Country Club, Peter Christenson, shows us an easy but fancy recipe for a bone-in pork chop.  Thanks to the MN Pork Board for sponsoring TCL Goes Hog Wild week.  You can find more recipes and cooking videos at PorkBeInspired.com.


Pork Chops w/Cranberry and Apple Tarragon Relish


2 Bone-In Pork Chops
Plump Chef Original Seasoning  (available at Kowalski’s Markets)
1 Haralson Apple
4 sprigs fresh tarragon or 1 teaspoon dried
1 cup Cranberry (fresh or frozen)
1 tsp olive oil
1 teaspoon fresh ginger minced
2 cup fresh apple cider
1 cup honey
1 cup rice vinegar


Pork Chops
-Season with Plump Chef Original Seasoning on both sides.
-Sear to a golden brown on both sides over medium heat.
-Reduce heat to low, cook pork to 145 degrees F.


-Dice apple and mince fresh sage.  Mix in a bowl with salt and pepper.
-In a pot add olive oil then fresh ginger.  Lightly cook ginger for 2-3 minutes over medium heat.
-Add apple cider, honey and rice wine vinegar.  Bring to a boil.
-Pour 1 cup of the boiling mixture over the apple and tarragon mixture- cover and reserve.
-Add cranberries to boiling mixture.  Continue to boil for 10 minutes until reduced.
