Blood Orange Sorbet Mimosa
Variation of recipe from Food for My Family

Ingredients:

1 Pint Blood Orange Sorbet (I like Cio Bella brand)
1 bottle brut champagne or dry Prosecco (I like James Cristalino)

Instructions:

In a coup glass (old fashioned champagne glass, available at thrift and antique stores) add a scoop of gelato. Just before serving, carefully pour bubbly. It will fizz like crazy. Let that die down a bit, before filling to the brim. Garnish with blood orange slice or mint. 

Serve.
