Shrimp on a Stick
Cooking for Dads host, Rob Barrett, prepares a dish that he says will be the next great fair food!
1 lb large shrimp peeled and deveined
1/2 stick of butter
2 cloves garlic, chopped
1/2 spoonful of garlic powder
1/2 tsp of onion powder
pinch of salt
1/2 spoonful brown or coconut sugar
1/2 spoonful cumin
1/2 spoonful of your favorite spice - cajun, berbere, Old Bay or the like
Heat grill to hot.
In a small pan, melt the butter and add garlic. Cook for 1 minute, stirring often.
Remove from heat and pour butter into a small bowl. Let cool for 5 minutes.
Add the rest of the ingredients and stir until combined and the sugar is dissolved.
Brush both sides of the shrimp with the butter mixture.
Place shrimp on grill. Flip after shrimp starts to turn pink. Brush again with the butter mixture. Cook until just cooked through - until the tail of the shrimp touches the top.
Option - Flatten shrimp by cutting a series of small slits on the curved side and bending until flat. Place shrimp on skewers longwise before cooking.
Serve while hot. Enjoy.
