Chicken & Waffles

Chicken and waffles is a classic southern dish that you don’t see too often in the Twin Cities.  The Girvan Grille in Brooklyn Park serves up this dish.  Chef Jason Libel shows us how they do it.

Cornmeal Tempura

1 cup Flour
½ cup Cornmeal
1 teaspoon Baking soda
1 Tablespoon Cajun Spice
1 teaspoon Chili Powder
1 teaspoon Garlic Powder
1 teaspoon Thyme

For batter:

Whisk all dry ingredients to ensure they are well incorporated.  Add club soda for a batter consistency.


Lightly season the chicken with corn starch. Dip chicken in tempura batter and place in a heated frying pan.  Cook for four minutes, turning occasionally. Cook chicken to 165 degrees.


Smoked Gouda Grits

2 ounces Stoneground Grits
6 ounces Half and Half (or milk)
½ ounce Smoked Gouda

Smoked Gouda grits:

Lightly toast grits in a sauté pan. Add half and half or milk as needed.  Once all the liquid is absorbed add cheese.


Spiced Honey Butter

½ pound Butter
¼ cup Brown Sugar
¼ cup Honey
½ teaspoon Ground Ginger
½ teaspoon Ground Ancho
1 teaspoon Salt
1 teaspoon Ground all spice

For spice honey butter:

Combine all ingredients and whisk with a hand mixer until fluffy.
