Easy Graduation Party Ideas

When you put all the hard work into throwing a grad party you want to enjoy it.  Owner of Golden Fig, Laurie Crowell, shares three recipes for your party so you’re not stuck in the kitchen.  A Grilled Citrus Chicken salad, Strawberry Melon salad and Lavender Berry Lemonade are make a head recipes to keep you out of the kitchen.


Grilled Citrus Chicken Salad

2 lbs boneless skinless chicken breast, pounded to uniform thickness
1 C extra virgin olive oil
1/3 C fresh lemon juice
1/3 C fresh lime juice
1/3 C fresh orange juice
1/4 C mixed chopped fresh herbs (basil, rosemary, dill, oregano...whatever are your favorites!)
2 tsp kosher salt
1 tsp black pepper
3 bell peppers (1 red, 1 yellow, 1 orange) sliced into strips
1 C snow peas or sugar snap peas, cleaned
a few thin slices of each lemon, lime and orange (do this before juicing!)

In bowl, whisk together olive oil, citrus juices, 2 TB fresh herbs, salt and pepper. Set aside 1/2 C of this mixture (for dressing the salad later!)

Place chicken in a nonreactive pan or dish and pour remaining marinade over chicken breasts and let rest several hours, up to overnight.

After chicken has marinaded, preheat grill to medium high. Place chicken breasts on grill about 8 minutes on each side (depending on how thinly you have pounded the chicken) try to only flip once (the grill marks look prettier!). cook the chicken until just done...don't overcook this one or it is a lot less delish.

Remove from grill and place on a plate, cover with foil and let rest.

In large bowl, toss all sliced veggies, remaining chopped herbs, peas with a pinch of salt and pepper.

When chicken is cool enough to handle, slice on an angle in about 3/8 inch thick slices.

Place sliced chicken and any juices from plate into bowl with veg. Whisk up reserved vinaigrette from before and drizzle over. Taste for seasoning and adjust to preference.

Serve warm or cold.


Strawberry Melon Salad

1 watermelon, cubed
1 quart strawberries, halved or quartered
handful fresh mint, torn or coarsely chopped
1 lime for zesting
Place melon and berries in large bowl, gently stir in mint and zest.

Any leftover fruit salad is perfect frozen and then buzzed up with rum the next day for a fun slushy drink!


Lavender Berry Lemonade

Lavender Lemonade *
Club soda
1 lemon, thinly sliced
fresh raspberries, blueberries and blackberries

In a large pitcher fill half full with ice.

Pour 1 bottle club soda.

Pour 16 oz Lavender lemonade in


Add fresh berries and lemon slices to pitcher. 

You can also add berries to each glass before pouring. Vodka is also a nice addition for the adult graduation party goers. :)

*If you don't have the Golden Fig Lavender Lemonade just buy a good quality lemonade (we like the Newmans brand a lot) and buy a bottle of edible lavender essential oil. Just place 1 or 2 drops of essential oil per 1/2 gallon of lemonade. Use the oil sparingly, there is a fine line between deliciously floral and soapy.
