Desserts with Olive Oil

You usually don’t think about dessert recipes when using olive oil.  Natalie Jaeger, owner of The Olive Grove, shows us three desserts that olive oil is perfect in.

Orange Citrus Cake

2 eggs
1 ¼ cup sugar
¾ cup The Olive Grove’s Blood Orange olive oil
¾ cup 2% milk
1 cup + 2 tbsp all-purpose flour
¼ tsp baking powder
¼ tsp baking soda
Dash salt
Powder sugar for dusting

Directions:
Preheat oven to 350 degrees.  Spray bottom of 9-inch round or square pan with olive oil.  The Olive Grove’s Misto Sprayer works perfect.  In a large bowl, whisk eggs and sugar.  Add olive oil and milk and mix well.  In a separate bowl, stir flour, baking powder, baking soda and salt.  Add to olive oil batter and stir just until smooth.  Pour into prepared pan and bake for 40 minutes, or until tester inserted into the center of the cake comes out clean.

Let sit until it cools completely.  Dust powdered sugar over the top of the cake and serve.

 

Strawberry Lime Ice Cream

This is fantastic!!!  If you don’t have an ice cream maker, Vitamix, or other blender with a freeze function, don’t fret.  Follow the directions below in your blender and it will be the consistency of a smoothie instead.

1C Vanilla Greek yogurt
1 lb Frozen strawberries
¼ C The Olive Grove’s Persian Lime olive oil

Directions:

In an ice cream maker, Vitamix or other frozen dessert blender, put in the yogurt, strawberries and olive oil in that order.  Blend until smooth.

Makes 3 cups of delicious, healthy ice cream even your children will love!

 

No Butter Chocolate Chip Cookies

Everyone’s favorite, but a lot healthier!

3/4 c The Olive Grove’s Roasted Walnut Oil
2 Eggs
1 tsp Vanilla
3/4 c Brown sugar
3/4 c Sugar
2 1/4 c Flour
1 tsp Baking soda
1 tsp Salt
12 oz. Chocolate chips

Directions:

In a mixing bowl, blend oil, eggs, vanilla, brown sugar and sugar together until creamy. Blend in flour, baking soda, salt and chocolate chips. Drop on cookie sheet and bake at 350 degrees for 10-12 minutes. Makes 5 dozen.
