Monster Pie Bar
Move over cookie and forget it cookie cake there is a new dessert in town! It’s called the Monster Pie Bar and it was created by owner of Angel Food Bakery, Katy Gerdes. She stops by the TCL Kitchen to show us how to make it.
2 cups brown sugar
1/2 cup (1 stick) unsalted butter
1 tablespoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon salt
2 cups flour
2 cups mix-ins
Preheat oven to 350 degrees. Lightly spray a pie pan or cake pan with cooking spray.
Cream brown sugar and butter in the bowl of an electric mixer fitted with a paddle attachment. Add eggs and vanilla and beat until combined. Add baking powder, salt, and flour and mix until flour is just incorporated (try not to over-mix).
Gently fold in most of mix-ins*.
Press into prepared pan (dough is sticky, spray your hands with cooking spray to avoid it sticking to your hands).
Sprinkle the remaining mix-ins over the top and press lightly to make them stick to the surface.
Bake at 350 for about 20-25 minutes. (Be careful not to overcook - the center will still be jiggly when you take these out of the oven and they will finish cooking and firming up as they cool.) Cool completely before slicing into wedges.
*MIX-INS* You can use almost anything you want for mix-ins... chocolate chips, nuts, dried fruits, butterscotch, chunks of cookies, chopped up candy bars, pretzels, potato chips, almost anything!
