No Bake Easter Treats

With everyone’s busy schedules there isn’t time to do it all but you still want to get a delicious treat on the table for Easter! Owner of Golden Fig in Saint Paul, Laurie Crowell, show us 2 no-bake dessert ideas! A peanut butter sea salt egg and tropical coconut nests, enjoy!

Peanut Butter Sea Salt Eggs

18 oz peanut butter
1/4 c butter
1 tsp Vanilla Bean Paste
16 oz powdered sugar
Pinch of sea salt
A few tsp. milk
2 c Chocolate chips milk,  dark or semi sweet are all a ok. Whichever is your fave.
1 tsp coconut oil or shortening

With mixer, blend peanut butter, butter and vanilla bean paste until fluffy. Carefully mix in powdered sugar and sea salt. Add a tsp. or two of milk if it is too dry.
Refrigerate for an hour or so until chilled.
Form into small (about 1 TB) eggs.
Place in parchment and freeze.
In double boiler, melt chips and coconut oil/shortening.
Stick a toothpick into end of peanut butter egg and carefully dip into melted chocolate.
Place on parchment and put into fridge. Serve when chocolate has hardened

Tropical Coconut Nests

2 c shredded coconut
1/2 c finely chopped dried pineapple
1/2 c chopped apricots
2 tsp finely chopped chopped crystallized ginger
2 tsp lime zest
1 tsp lime juice
1 c white chocolate
1 tsp coconut oil or shortening

Stir all ingredients except white chocolate and shortening.
In a double boiler melt white chocolate and shortening together.
When melted, stir melted chocolate into other ingredients. Scoop by tablespoonfuls onto parchment.
Let rest in fridge 15 minutes before serving :)
