30 Minute Meal w/ a Workout

We first met Lindsey Bomgren in January as our Potluck winner, showing us how to make a Cherry Wild Rice Salad.  Come to find out, Lindsey has her own lifestyle blog full of recipe and workout ideas called “Nourish Move Love”.  We’ve invited her back to show us how to make a Lemon Chicken recipe that won’t take longer than 30 minutes to make and a workout move that we can do while it’s cooking!

Lemon chicken with capers ingredients:

1 lb boneless skinless chicken breasts {2-4 chicken breasts}
1 1/2 c chicken broth
1 large lemon {1/2 for fresh juice and 1/2 thinly sliced}
1/4 c jarred capers
1-2 cloves garlic, finely chopped
2 tbsp extra virgin olive oil
black pepper and sea salt to taste
fresh chives, finely chopped
optional: 1/4-1/2 c white wine


Depending the size of your chicken breasts you may want to cut the breasts in half so you have a total of 3-4 pieces.

Heat 2 tbsp of olive oil in a large, heavy skillet on the oven over medium heat.

Place the chicken breasts in the skillet/pan and add chicken broth, fresh lemon juice {1/2 of lemon}, garlic, salt and pepper to taste. You can also top each chicken breast with a thin lemon slice at this time if you want the lemon slice to bake in with this chicken {or you can add as a garnish once the chicken is cooked through}. Cover pan and let chicken cook for 8-10 minutes. Then turn the chicken breasts and add the optional white wine and capers to the pan. Cover and let cook for an additional 5-8 minutes, depending on the size of your chicken breasts.

Once you chicken breasts are golden brown and cooked through, remove from pan and top with lemon slice, capers from the pan and fresh chives. Serve with garlic roasted veggies and enjoy!

Store leftovers in the fridge for 2-3 days.
