Fish Paloma
A Mediterranean diet has health benefits – and now there is proof. A report shows that about 30% of heart attacks, stroks, and deaths were eliminated when participants switched to a diet incorporating plenty of fish, nuts, and wine. Our wine guy, Ted Farrell, from Haskell’s is here creating a Mediterranean fish dish using wine.
Ingredients:
1-2lbs Cod or Halibut ( heavier flaky white fish)
2 cups Cannelloni Beans (Great Northern can be substituted)
3 cups Diced Tomatoes
1/2 cup carrots, diced
1/2 cup celery, diced
1/2 cup onion, diced
1 Tbsp Anchovy Paste
2 Tbsp Thyme
1 cup dry white wine
1 clove minced garlic
salt
pepper
Paloma Sauce
In a sided pan, over high heat, add the Olive oil
Once heated add the celery, onions, carrots. Saute until translucent.
Add garlic, cook for a minute. Add salt pepper to taste
Stir in the anchovy paste, once incorporated, deglaze with the white wine.
Let alcohol burn off (2-3 mins)
Add tomatoes and beans.
Drop heat let simmer for 10-15mins
For the fish:
Season the fish
Coat a frying pan w small amount of Olive Oil
Over High heat, sear both sides for the fish
Cook to the level of doneness you require
Once finished, in a shallow bowl, ladle in some of the sauce place fish on top and serve.
