Inside Out Caprese
It’s not what’s on the outside that matters – it’s what’s on the inside, right? That’s especially true when the inside is so sweet! Owner of Golden Fig, Laurie Crowell, shows us some easy inside out recipes for Valentines Day.
1 cup perlini sized fresh mozzarella (little gumball sized rounds)
Pinch of Sel de Cuisine (or other coarse salt)
4 TB Balsamic Vinaigrette *
Fresh basil leaves for garnish
Carefully cut top of tomato off. Scoop out seeds and some interior tomato, be sure to leave enough to keep tomato sturdy.
Fill each tomato with little mozzarella balls.
Drizzle Vinaigrette over top
*you can use a premade Vinaigrette or
in a jar with lid place 1/4 cup olive oil, 1/8 cup balsamic vinegar, 1 tsp. mustard, salt and pepper to taste.
Shake to emulsify and use
