Homemade Salad Dressings
Kirsten Shabaz has entered many cooking competitions and even has won some on a national scale. She’s here to show us how easy making your own salad dressings can be with a Junk Bowl Salad topped with her homemade dressings.
MUSTARD VINAIGRETTE DRESSING

Ingredients
1/2 cup white vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
1/2 teaspoon ground black pepper
2 teaspoons salt
3 cloves garlic, minced
1 cup vegetable oil
4-6 drops/dashes hot sauce
*Mix all dressing ingredients together and chill for up to 3-4 weeks.
GREEK DRESSING
Ingredients
1/4 cup extra virgin olive oil
2 1/2 tablespoons fresh squeezed lemon juice
2 - 3 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
Directions
1. In a small bowl whisk together all the ingredients until completely combined. Pour into a glass mason jar & chill until use.
GREEK SALAD INGREDIENTS:
2 cups cooked bulgur wheat or quinoa
1 small red onion, sliced
1 cup kalamata olives, chopped
1 cucumber, peeled & diced
2 small tomatoes, chopped
½ cup minced parsley
1 bunch rainbow chard, thinly sliced into ribbons
4 ounces feta cheese
2 cooked chicken breasts, diced
*Place all salad ingredients into a bowl, drizzle with Greek dressing and serve.
BALSAMIC DRESSING
Ingredients
1/3 cup Pear balsamic vinegar
1/3 cup walnut oil
¼ cup light olive oil
1 tablespoon Dijon mustard
2-3 cloves garlic, minced
¼ teaspoon dried thyme
1/4 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
Directions
1. In a small bowl whisk together all the ingredients until completely combined. Pour into a glass mason jar & chill until use.
PEAR, BEET & WALNUT SALAD
1 package mixed greens
1 package Romaine lettuce
Leaves of golden beets, thinly sliced into ribbons
3-4 small golden beets, thinly sliced or julienned
2 red Anjou pears, sliced
1 cup toasted walnuts, coarsely chopped
½ cup dried cherries
4 ounces crumbled goat cheese
*Place all salad ingredients into a bowl except goat cheese. Drizzle with desired amount of dressing, toss and sprinkle each serving with crumbled goat cheese.
