“Junk Bowl” Salad
Prepared by Kirsten Shabaz.
Ingredients:
1 bunch kale, chopped
3 cups chopped romaine lettuce
1 head Radicchio lettuce, shredded
1 can great northern beans, drained & rinsed
½ cup diced red bell pepper
½ cup diced yellow bell pepper
½ cup shredded carrots
½ cup shredded or shaved Parmesan cheese
2 cooked chicken breasts, diced
*Place all “Junk Bowl” salad ingredients into a large bowl, toss with desired amount of dressing & serve.
