Stained Glass Cookies

Alice Seuffert, is up with Day 10 of our 12 Days of Cookies with a recipe courtesy of Land O’Lakes.

INGREDIENTS

1 cup Land O Lakes® Butter, softened
1 cup powdered sugar
1 Land O Lakes® All-Natural Egg
1 teaspoon vanilla
2 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup gumdrops, cut into small pieces
4 tablespoons decorator sugars

DIRECTIONS

Preheat oven to 350°F.

Combine butter and powdered sugar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg and vanilla; continue beating until well mixed. Reduce speed to low. Add flour, baking powder and salt; beat until well mixed. Stir in gumdrops.

Divide dough in half on lightly floured surface; shape each half into an 8x1 1/2-inch log.

Place 2 tablespoons decorator sugar on large piece of plastic food wrap. Roll 1 log in decorator sugar to coat. Wrap tightly in plastic food wrap. Repeat with remaining log and decorator sugar. Refrigerate until firm (8 hours or overnight).

Carefully cut logs into 1/4-inch slices with sharp, serrated knife. Place 1 inch apart onto ungreased cookie sheets. Bake for 8 to 10 minutes or until set. Cool 1 minute; remove from cookie sheets.

Makes 5 dozen cookies
