Crunchy Almond Harvest Salad with Honey Cider Vinaigrette

Registered Dietician from Cub Foods, Heidi Diller, has some easy and healthy appetizer options to help avoid all those added calories. 

Serves 4

Ingredients                                  

Dressing:
1/4 cup olive oil
2 tablespoons cider vinegar
1 tablespoon honey
2 teaspoons Dijon mustard
1/4 teaspoon Kosher salt
Fresh ground black pepper

Salad:
2 heads of Belgian endive
6 cups mixed salad greens
1 apple, sliced
3 oz. Culinary Circle goat cheese
¾ cup Sweet Roasted with Pomegranate Wonderful Almond Accents

Directions:

  1. Wish together dressing ingredients in a small bowl.
  2. Combine salad ingredient, toss and serve.
