Speedy Recipe: No Bake Pizza

STRAWBERRY-ONION SALAD WITH POPPY SEED DRESSING

1 pint fresh strawberries
1 medium red onion
1 head romaine lettuce
¾ mayonnaise (regular, low-fat, or fat-free)
¼ milk (regular or vanilla soy)
2 tablespoons white vinegar
2 tablespoons poppy seeds
½ tablespoon sugar

  1. Rinse and slice strawberries and set aside.  Cut onion into julienne slices and set aside.  Rinse lettuce and dry.  Combine berries, onion, and lettuce in a salad bowl.  Toss. 
  2. Create the dressing by mixing mayonnaise, milk, vinegar, poppy seeds, and sugar together.  Whisk until well blended.  Transfer dressing to a serving vessel and serve salad.  Serves 6. 

 

PIZZA BIANCE WITH PROSCIUTTO, ARUGULA, & PARMESAN

1 (12-inch) or 2 (8-inch) ready-made pizza crusts
1-2 tablespoons extra-virgin olive oil
8 thin slices prosciutto
1 cup (packed) arugula leaves
1 cups fresh Parmesan shavings

  1. Brush pizza crust with olive oil (you may heat crust on grill for a minute or two to warm or until grill mark appear). 
  2. Top with prosciutto, arugula, and Parmesan. Drizzle each with 1/2 tablespoon olive oil and serve immediately.  Serves 8-10
