Watermelon Gazpacho

Former Food Network Star Contestant, Justin Davis, is keeping it cool and putting dinner on the table in five minutes or less.

1 small seedless watermelon, peeled and cut into chunks
1 tomato, cut into quarters
1/2 seedless English cucumber
1/2 - 1 fresh jalapeno, cut in half (optional)
1/4 cup rice wine vinegar
1/2 fresh lime
1/2 teaspoon kosher salt, along with extra for finishing the dish
fresh cracked pepper, to-taste
1 or 2 scallions, sliced on the bias (green parts only for garnish)

Combine all ingredients (except the scallions) into a blender cup. Blend until smooth, maybe 2 minutes. Check the mixture for seasoning, it may need a splash of rice wine vinegar or some extra salt depending on your mixture. When you are pleased with the seasoning, strain the soup through a fine mesh sieve or a chinoise if you happen to have one. Straining keeps the soup silky and free of debris. Now either chill the soup in the refrigerator or if you are in a pinch, through some ice into a martini shaker and chill the soup that way.  Garnish with the scallions.
