Porky Pops

Yield: 10 each

½ each Hormel Always Tender Pork Loin
½ cup Alton’s Spice Rub
10 each Wood skewers
1 cup Apple Cider
1 ½ cup Apple wood chips soaked

  1. Soak wooden skewers in apple cider
  2. Remove pork from package and slice into 6 oz chops
  3. Insert skewers into pork chop
  4. Season each with 1 tsp of spice rub
  5. Place in zip lock bag
  6. Let sit in the refrigerator overnight
  7. Drain wood chips and wrap in a foil packet perforate top of packet to allow smoke to escape
  8. Start one burner of grill or build a small charcoal fire on one side of the grill
  9. Set pork on other side of grill
  10. Place foil packet of wood chips on heat to begin to smoke
  11. Smoke pork for 15 – 20 minutes then remove wood chip packet
  12. Check temperature.  Pork must read 145 degrees on a meat thermometer.  Allow pork to slow cook for additional time if needed slowly feeding fire
  13. allow port to rest for 5 minutes if serving immediately – if serving pork at a later time place in refrigerator to cool
  14. Grill and baste with favorite sauce
