Fresh Quinoa with Cilantro
A healthy swap for white rice – prepared by Registered Dietitian Sina Teskey.
1 ½ cup Quinoa
A large handful of fresh cilantro
5 green onions
Heat 3 cups of water with 1 ½ cups of quinoa unti boiling.
Cover and reduce heat to low
Cook until liquid is absorbed
Chop a large handful of cilantro and 4 to 5 green onions and add to the quinoa
Season with salt, pepper and a dash of crushed red pepper and serve hot or cold
