Artichoke Heart Pasta
Artichokes are a healthy alternative to green olives. Try this recipe by Registered Dietician, Sina Teskey.
Ingredients
3 to 4 garlic cloves, minced
½ Tbsp butter
1 Tbsp olive oil
1 Onion (or 5 green onions)
1 can of chopped artichoke hearts
½ cup white wine
1 cup cherry tomatoes
1 package of whole-wheat spaghetti noodles
Italian seasoning
Salt
Pepper
2 Tbsp Pesto (optional)
-Bring a pot of water to boil and cook pasta noodles according to package
-While pasta is cooking make the sauce. Heat saucepan to medium and add ½ Tbsp butter and 1 Tbsp olive oil. Let butter melt
-Add onions and garlic to saucepan and cook on medium for three minutes
-Add white wine, tomatoes and artichoke hearts and simmer 5 to 8 minutes or until the liquid reduces
-Take a spatula and smash the tomatoes after they have simmered
-Add sauce to drained noodles. If you have prepared pesto available you can add 2 Tbsp to the dish. Season heavily with Italian seasoning and a dash of salt and pepper
