Grilled Cocktails

We’ve grilled just about everything here on Twin Cities Live from pizzas to desserts.  But the one thing we’ve never grilled is drinks!  That is until today!  Laurie Crowell from Golden Fig shows us exactly what that means.  

Grilled Lemonade

8 lemons cut in half and dipped in 1/4 C sugar (you can use plain, but Vanilla Sugar, Lavender Ginger Sugar etc are super fun too!)
1 C Sugar for simple syrup
1 C Water for simple syrup
1 additional cup of water

Grill lemons, flat side down, over medium heat until sugared end is caramel.

While lemons are cooling simmer 1 C sugar with 1 C water for 5 minutes to make simple syrup.

Squeeze lemons (you should have 1 C)

Stir in simple syrup, add water to adjust to taste.

Delicious served on ice, tasty with a splash of bourbon.

 

Grilled Strawberry Margaritas

3 C fresh strawberries hulled and tossed in sugar (I love Vanilla Sugar with this one)
3 C ice
1/2 C tequila
1/2 C lime juice
zest of 1 lime
2 TB Cointreau
2 TB sugar

Skewer and grill berries until bubbly. Place in blender with all remaining ingredients and buzz until smooth.

 

Grilled Pina Colada

3 C pineapple, cored and sliced- toss with a little sugar
1/2 C rum
3 TB lime juice
1 tsp lime zest
1/2 C coconut milk
2 TB sugar or honey
3-4 C ice

Over medium flame grill pineapple until caramely and soft

Put in blender and buzz with remaining ingredients.
