12 Days of Grilling: Chicken & Stuffing on a Stick

Chicken & Stuffing on a Stick
Make a simple marinade of:
2 spoonfuls balsamic vinegar
3 spoonfuls olive oil
4 cloves of garlic chopped
2 spoonfuls fresh lemon juice
and a little salt and pepper
Add 1 1/2 lbs chicken breasts cut in to 1" squares. Stir to coat and let marinade for anywhere from 15 minutes to 2 hours.
Make a box of Stove Top Stuffing according to the directions, let it cool. Add 1/2 a beaten egg and stir. Roll into small balls and place aside.
Put chicken cubes and stuffing balls on skewers alternating stuffing balls and chicken.
Place on a hot and oiled grill for 3 to 4 minutes, then flip. Allow to cook until chicken is firm.
Remove and serve with gravy and/or cranberry sauce.
