I have been looking forward to today all week, not only because it's Friday, but also because it was another family lunch day!  Today's menu included some delicious antipasti salad, salad with bleu cheese, dried cranberries, nuts, and a super secret dressing, plus brownies made with applesauce...who knew? This is a great idea because it cuts the calories in the recipe, while maintaining the taste!

Interestingly enough, our TCL Kitchen Star also had a unique take on her chocolate cupcakes.  She likes to use beets in her recipe!  I have never heard of doing such a thing before, and I was a little skeptical, but after one bite, I was hooked!  I couldn't taste the beets but the dark chocolatey flavor was out of this world!  Alice is a great cook and she actually has a little chef to be at home who was watching attentively from backstage!  A chef hat never looked so cute!  I hope you all have a great weekend, come on out and visit John, Emily, and myself at the Lumberjack Days Parade on Sunday in Stillwater!  It may be a little hot to wear flannel but there that doesn't mean we can't have some Paul Bunyan style fun!
