It’s no secret that I am not a cook. I married a man that is fabulous in the kitchen. Therefore, you will rarely find me preparing dinner. Ok, it never happens. I do, however, have one recipe that I make several times a year and now I’m sharing it with you so you can spread the joy. I’m not sure what it’s called. (I got the recipe from a friend in Illinois who isn’t as obsessed with it as I am). So, my husband and I have named it “Lemon Delight” or “Lemon D” for short. It’s amazing and amazingly simple to make. Obviously, if I’m the one raving about it it’s very simple.
This past weekend, Elizabeth Ries and I were lucky enough to be asked to do a cooking demonstration at the “Taste of Minnesota”. I laughed, but then realized I could make “Lemon D”! I have already impressed my co-workers with its deliciousness. Why not share it with more people! So, while my talented musician husband, Dustin Lee, performed next to us on stage, we took over with the cooking. Elizabeth made an amazing dinner. She made “Parmesan Chicken Cutlets” and “Lemon Risotto”. Yes, we had a lemon theme going. Then, in less than 5 minutes…wah lah! I had “Lemon D” done and ready to share.
I wasn’t surprised by the rave reviews. People were shocked at how weird and simple this dessert was to make. They were even more shocked to find out how light and tasty it is! So, as promised, I have the recipe for you. It’s perfect for a hot summer day, but it’s just as good when it’s 20 below. Just know it’s really addicting and hard to stop at one piece. What you will need: a hand full of vanilla wafers 12 oz. of Lite Cool Whip ˝ cup of Lemon Juice 1 can of Eagle Brand Fat Free Sweetened Condensed Milk
Take a hand full of vanilla wafers and crush. Take crushed wafers and use them to line the bottom of a loaf pan. Put cool whip, lemon juice and condensed milk in a bowl. Fold. Then, pour into the loaf pan over the wafers. Put in the freezer and enjoy once frozen!
