Greek Salad Skewers
 

Prepared by Antigoni Sander of Kafe 421.

Makes About 2 Dozen

Ingredients

1 Pint Grape Tomtoes
1 Medium Cucumber
*4 oz Chunk Feta packed in water, drained and cut into about 30 cubes
24 Kalamata Olives without Pits; Drained
2 - 3 Tbsp Dried Oregano
1/4 Red Onion, Finely Diced
Salt and Pepper to Taste
Extra Virgin Olive Oil
Red Wine Vinegar

Directions For Skewers

1)  Wash Tomatoes and pat dry. 

2)  Cut cucumber into 24 equal sized pieces.  I recommend slicing the cucumber at from the top point to the bottom point.  Laying the insides out flat on the cutting board and then cutting each 1/2 once more from point to point.  Now slice these four cucumber spears into cubes (they should look like mini pieces of pie).  Give these a light sprinkling of salt.

3)  Slice the block of feta into about 30 equal sized cubes.  Take care to not crumble the feta as this can happen easily!  You are making 30 cubes instead of 24 as you will most likely crumble a few when you are skewering the cheese. So it's good to start with a few extra pieces!  Just take your time with this step, once you get the hang of it, the feta skewers pretty smoothly.

4)  Assemble Skewers:  Start with 1 Whole Grape Tomato, Followed by a feta cube, cucumber cube and finally an olive.  For a pretty platting suggestion, alternate between the tomato and the cucumber as the first piece of food on the skewer.  When plated it will look nice to have the color change back and forth from red to green. 

5)  Place skewers on serving platter.  When platter if full generously sprinkle the skewers with dried oregano. Rubbing it between your fingers as you sprinkle it on so that the oregano is nice and fine.  Sprinkle on the diced red onion.  Last drizzle the skewers with Extra Virgin Olive Oil and Sprinkle all over with Red Wine Vinegar.

*  If you don't want to mess around with trying to skewer the feta you can  substitute a Greek Cheese called Kessari.  It is a semi-hard cheese that won't crumble at all and has the nice salty bite to it that feta has.   This can be purchased at local shops like Bill's Imported Foods in Uptown, or stores that specialize in imported cheeses.  You can also use Provolone for an easier to find option, it has a similar salty bite to it, and can be found everywhere!

**For Skewers use a skewer that is about 3" - 4" long.  They can be made on longer skewers but you will need more ingredients to make 2 dozen*
